Do you like cheese? Because this is really good cheese.
Our friends, Ken and Becky Ropp, went into the cheese business a few years back, turning their rich, creamy purebred Jersey milk into a sweet sideline business. Ken went to cheese school in Wisconsin (where else?) and this time of year, he and his band of cheesemakers crank out even more cheese than usual.
And they have curds. And specialty cheeses. I'm a big fan of the pizza cheese. And the regular old white cheddar. It's excellent.
If you're interested, check out the Ropp Cheese website. Becky says they have cheeses in HyVee stores now, and you can buy fresh from their farm store, just off the I-55/I-74 interstate exchange northwest of Bloomington. They ship, too.
And why Jerseys? Ken told me once they were too poor to raise Holsteins and too proud to raise goats. This has nothing to do with anything, other than it cracks me up and comes to mind every time I think of Ken.
