What Gets Us Through: Frozen Fruit

It's cold, it's refreshing, it's fruity. Sometimes, it's dinner. And here's the recipe.

This is a little silly, but it's fair week and we live on this stuff when it's hot. Like, a cup of frozen fruit might just be enough for dinner some nights. And so I share it with you, in honor of fairs and heat everywhere. Frozen fruit may be my husband's actual love language.

 


Frozen Fruit (catchy name, no?)

 

2 cans crushed pineapple, undrained

2 pkgs frozen sweetened strawberries, thawed

1 can fruit cocktail, undrained

1 12-oz can orange juice concentrate, thawed

1 6-oz can lemonade concentrate, thawed

4-6 medium bananas, sliced

3-4 cups frozen blueberries

Frozen fruit gets two thumbs up from the smallest taste testers.

Mix well. Pour into 9-oz. Dixie (wedding punch) cups. Freeze. Fills about 18 cups.

 

*Note: sometimes I throw in a cup or so of mini chocolate chips. Also, sometimes I fill several cups only half full, for the kids.
